Holy Scorfino Batman!!!!

Hey everybody. How are you? I doing well. Busy, busy morning (first shift). It was cleaning day! And we had to wash, clean and degrease. And wash, clean and degrease. That is just part of the job! Then I got to work. Cleaning lettuce (finding slugs), escarole, cleaning and cutting artichoke hearts (staining my fingers) slicing zucchini (with the mandolin), peeling and quartering tomatoes and more!
After staff lunch we had a few tables, I finished the artichokes and then came the Scorfino and Lucernia. Scorpion fish and another fish! The fish were braised then we had to take the meat off the bones!!!! Remember in a previous post I was happy to be filleting that huge fish? Well let’s just say I was less than happy to take this fish off the bone! Or bones shall I say. It is a fact that when you cook fish it is easier to remove the bones, however, when there are a large amount of pin bones it takes a lot of patience and precision!!! I was so worried about leaving in a bone that I went extra slow, which means I was probably there a lot longer than I should have. But the person that receives this meal with this fish will be more than please because a lot of love and praying went into cleaning that fish to ensure no bones remained!!!
I took a picture of these bones to give you all a visual of what I was doing. Well that made the kitchen erupt in laughter then Asanka motioned over to the garbage and said (in italian) “why don’t you take a picture of the garbage can”. Since I only know a little italian all I could retort with was “Si! Io fotografia”
I wanted to say… I want to take the picture so everyone will see that I had to clean all these bones!!! Yea that was not being said so I proudly put my camera back in my pocket and continued with the task at hand!

Man, what morning! Then I got a ride home so I guess a job well done for me 🙂
