Among some of my tasks during my work schedule are cleaning the freshly delivered seafood. One of them that I actually enjoy doing, in a strange way, is cleaning Alici. A European Anchovy.
You pinch it’s head off them you run your finger along its stomach to remove the innards! Sounds great doesn’t it.
You see I never liked anchovies or sardines growing up, my father would eat sardine sandwiches with mustard. And the only anchovies I knew were the ones that were salty and very fishy. Well these are nothing like that!!! These are fresh and very good. They seem to be a staple in the napolitano diet. There are many great recipes that this little fish is the star in. Marinated, fried, stuffed, layered, or simply sauteed in olive oil and garlic with water and lemon or vinegar. Buono!!!
