Umm okay. We make soup, now for an order or for later on?? Now…of course we do!!!!!
What other restaurant do you know that has awesome vegetables prepared fresh everyday and makes soup on the spot when someone orders it! Now I know that La Taverna del Leone does and it truly reminds you of home!!! Oh my goodness I love it here!!!
Cut fresh carrots, onion, leeks, celery including the leafs lightly sautee in good olive oil then add some salted water (pasta water is best to make it creamy) let the veggies soften. Add chopped tomato only a little bit. Some broth, a little more water. Then some cooked vegetables. We added green beans, escarole, zucchini… Then finite!!!
You can add cooked beans if you like simple and easy just like mama used to make. Of course this is very easy to do, so why am I posting it? Because this is real home cooking everyone and I am enjoying it. Just what I needed. More to come soon!
