A great and versatile salad that can be a side, a main dish or you can add your favorite protein to it!
Ingredients
1 Can Black Beans, rinsed and drained well
Corn, 1 bag of Frozen or 3 ears of fresh (only the kernels)
1 Red Pepper, diced
1 Jalapeno, deseeded & diced - optional
Cilantro, options
1 Lime, Zest & Juice
1T White Vinegar
2t Cumin
1t Onion Powder
1t Granulated Garlic
Smoked Paprika, optional
Salt & Pepper, to taste
If you need to add a sweetener, either granulated sugar or honey.
Procedure:
Combine all ingredients above
Season with Spices
Mix well and taste - Add more seasonings as needed
