Black Bean & Corn Salad

A great and versatile salad that can be a side, a main dish or you can add your favorite protein to it!

Ingredients

  • 1 Can Black Beans, rinsed and drained well

  • Corn, 1 bag of Frozen or 3 ears of fresh (only the kernels)

  • 1 Red Pepper, diced

  • 1 Jalapeno, deseeded & diced - optional

  • Cilantro, options

  • 1 Lime, Zest & Juice

  • 1T White Vinegar

  • 2t Cumin

  • 1t Onion Powder

  • 1t Granulated Garlic

  • Smoked Paprika, optional

  • Salt & Pepper, to taste

  • If you need to add a sweetener, either granulated sugar or honey.

Procedure:

  1. Combine all ingredients above

  2. Season with Spices

  3. Mix well and taste - Add more seasonings as needed
